Recipe: Strawberry Shortcake Blinis
Ingredients:- 1 box of Vanilla Cupcake & Cake Mix
- Required add-ins as per the Vanilla Cupcake & Cake Mix instructions
- 1 cup heavy (whipping) cream
- Sugar (optional)
- Butter (for pan)
- Make batter according to the instructions on the box.
- Preheat a large skillet on medium heat.
- Once heated, butter the pan and spoon 1 tsp of batter per blini.
- Once little bubbles start to form on top of the blinis use a small spatula to flip like you would a pancake. Cook for one more minute.
- Transfer to a plate and let rest.
- While the blinis rest, whip the heavy cream using an electric mixer until medium peaks form (optional: add a pinch of sugar to the heavy cream if you prefer a sweeter whipped cream.)
