Winter Bliss: Homemade Hot Chocolate Cookies
The cold weather has certainly snuck up on us here in New York, and while we’re bundled up in layers upon layers of clothing, there's still a distinct coziness in embracing the season’s chill. Warm beverages, snug blankets, and delightful treats become an integral part of this time of year.
While the classic hot chocolate has been a steadfast companion, we've embarked on a culinary adventure to elevate the traditional hot chocolate into a new form – a chewy and chocolatey cookie using our signature Chocolate Cupcake & Cake Mix. These cookies are a decadent surprise for your taste buds and an absolute must-have during the wintry months.
Ingredients:
- 1 box of Chocolate Cupcake & Cake Mix (ignore add-ins on the box)
- 1 egg
- 5 tbsp butter (70g) (cold)
- 1 cup mini marshmallows
Instructions:
- Preheat your oven to 350°F.
- Cut the butter into cubes and add to a large bowl.
- Add in the cake mix and eggs and using a stand mixer with paddle attachment, mix on medium speed until it comes together into a cohesive dough. This will take a few min and it will look slightly sandy for a while. Stop mixing as soon as it comes together.
- Roll the dough into balls - about 2 tbsp worth. While rolling out the dough balls, add 3-4 mini marshmallows into the center of each ball. You should get roughly 12 cookies.
- Evenly distribute each ball onto a lined baking sheet with enough space for them to spread. Bake for around 10 minutes until the cookies look puffy with shiny cracks all over the top. They won’t look completely dry, which is what you are looking for.
- Let cool completely.
